Most special / most memorable / weirdest ice cream?

I see that the top pizza topping topic is going strong so here is a similar one:

Tell me about your most memorable or weirdest ice cream!

I'll go first.

In 2019 a new ice cream café opened almost exactly 13 Km away from me. The owners had no idea what they were doing, but the young and ambitions ice cream maker dude knew he wanted to make something special. So each week he proposed a menu on FB that had a few of the usual suspects... chocolates, and vanillas and whatnot (the salted pistachio was to die for), but there were at least a few very unlikely ones too!
I made it my Sunday tradition to walk there across a small forest, through a small town and then crossing a beautiful park region, to eat one ball of every weird creation and then take a bus home.

My favourite of his creations were:

Belgian beer sorbet (with chips)
beetroot-litchi ice cream
spinach-pear ice cream
Roquefort ice cream

Corona lockdowns claimed the business and I've never got to know where (or if at all) the ice cream dude continued elsewhere.

Wasabi and Lobster.

The sorbet sounds good, though not ice cream, not sure about the others you have listed that I would try except maybe the Beetroot and Litchi.
People top their ice cream with some really off-the-wall things, like fish, urchin etc.

Beetroot and litchi was a sweet and intense beetroot, a bit like the 100% organic juices.
